Here is a recipe that I got from King Arthur Recipes a while back and I had it hidden in my recipe book. These cookies are really GOOD, and I am not just saying that. Best of all they are flourless, rich chocolate cookies with no added fat, and no gluten. Plus they are so easy to make, just stir together a few simple ingredients, scoop onto a baking sheet, and bake for 8 minutes.
Ingredients
2 1/4 cups confectioners' sugar
1/4 teaspoon salt
1 cup cocoa powder
3 large egg whites
2 teaspoons gluten-free vanilla extract
Directions
Preheat oven to 350, line your baking sheets with parchment paper.
Mix together all of the ingredients until nice and smooth.
Drop the cookie dough onto the baking sheets.
Bake for 8 minutes.
Remove the cookies from the oven, and allow them to cool right on the pan.
*You should get 16 large cookies
