Spring is in the air, even though its a little chill in the air, the kids and I made about three different Spring cookies and cupcakes over this past weekend, in majority all my recipes there was some type of candy, so my little ones were hyped up on jelly beans, m&m's, chocolate eggs you name it. This is one of the seasons where I allow them to have these certain candies, well it's also because I LOVE jelly beans!
These cupcakes are just my simple Vanilla Pudding Cupcakes with a little twist. The decorations came out way better than I expected, my kiddies helped with everything, they also took the pictures of all the treats we made, I got a new camera and we are loving it, I think they did a great job.

Ingredients

Ingredients
2 1/2 cups of whole wheat white flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup light brown sugar
1 tsp vanilla
1 cup buttermilk *Homemade
2 eggs *Brown Fresh Eggs
1 tsp white vinegar
1 cup Vanilla Pudding * I use the little already made ones
1 cup canola oil
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup light brown sugar
1 tsp vanilla
1 cup buttermilk *Homemade
2 eggs *Brown Fresh Eggs
1 tsp white vinegar
1 cup Vanilla Pudding * I use the little already made ones
1 cup canola oil
Set oven to 350
Mix wet ingredients, and then add dry ingredients until well blended. Fill cupcakes cups 1/2 way. Bake for 20 minutes, for standard cupcakes, bake for 12 minutes for mini cupcakes. Let cool on wire rack.
Cream Cheese Frosting
8oz package of cream cheese (softened)
1 stick of unsalted butter (softened)
3 cups of powdered sugar
1 tsp vanilla
1 tsp vanilla
Coconut (sweetened or unsweetened whichever you prefer)
Mix cream cheese and butter together, add powdered sugar in 1 cup at a time. Put coconut in small ziploc bags and put food coloring in bag and mix around so it can coat the coconut. Frost cupcakes and dip in different color coconut. Put any kind of candies on the top, since its Spring time and Easter season, I put jelly beans on top to make it look like a bird nest! There you have it
