Peanut Butter Chocolate Chip Mini Cupcakes (Whole Wheat)




My friend Julie from Jam's Corner made some delicious looking cupcakes, Reese's Surprise Mini Cupcakes.  Now what is better than Chocolate and Peanut Butter in a cupcake, a mini one at that; you can just pop that in your mouth for a delightful treat.  So I wanted to make these cupcakes but with my healthy ingredients.  Well I forgot to pick up some Reese Cups when I went grocery shopping, so I had to compromise.  So I had peanut butter and chocolate chips so I just made due with those extra ingredients.  These mini cupcakes came out GOOD! and I used the recipe Julie did, but just used my healthy ingredients.  So without further ado. 

Peanut Butter Chocolate Chip Mini Cupcakes (Whole Wheat)




Ingredients

1/2 cup of unsalted butter, room temperature
2/3 cup of light brown sugar
1 tsp of vanilla extract
1 1/2 cups of whole wheat flour
1 1/2 tsp of baking powder
1/4 tsp of salt
1/4 of low fat milk, room temperature
3 large eggs, room temperature
1 cup of chocolate chips
1/4 cup peanut butter


Directions

Set Oven to 350. Mix wet ingredients, then add sifted dry ingredients slowly.  Fill cupcake liners 1/2 full and add chocolate chips.  Bake for 10 minutes.  Let cool on wire rack.


Peanut Butter Cream Frosting

1/2 cup butter softened
1/2 peanut butter
low fat milk (whatever you need for consistency)
2 cups sifted powdered sugar
1 tsp vanilla
1/4 cup cocoa powder

Cream butter, peanut and vanilla.  Add powdered sugar slowly, add cocoa and milk if needed.  Pipe cupcakes.
