It's beginning to look alot like Christmas in my house, we put up our decorations this weekend! Not everything is up yet, because we are getting the house painted inside, so I have to wait to put my wall decorations up. I so love this time of year, I don't like the cold but I love the holidays, especially Christmas, not for the gifts, but for the true meaning! Jesus is the reason for the season!
I love making Christmas treats, I love eating Coconut Macaroons that's what I call them, not sure if that is the correct name. I made them nice and healthy, and they were delicious. So I thought why not make some green and red ones for the holiday! They came out really good!
Skinny Coconut Macaroons
Ingredients
3 cups unsweetened coconut flakes
1/4 cup warm water
1/4 cup coconut oil
1/3 light brown sugar
3 eggs, beaten
1/4 cup warm water
1/4 cup coconut oil
1/3 light brown sugar
3 eggs, beaten
Directions
Set oven to 400, in bowl combine coconut with warm water, and coconut oil. Stir well. In another bowl combine eggs and light brown sugar, mix thoroughly. Pour egg mixture into coconut mixture and stir well. Use small scooper, drop cookie on an ungreased baking sheet. Bake for 12 minutes. Cool on wire rack.
Want to color them. I used coloring for icing, I like those better! You can use food coloring also!
