Mint Chocolate Chip Cookies, when you bite into these, you taste the peppermint and the chocolate, what a yummy pair! I made them green for the Christmas Holiday, these would also be great cookies to make for St. Patrick's Day!
Cookies
2 cups whole wheat flour
1 tsp baking soda
1/2 tsp salt
1 cup light brown sugar
1 cup unsalted butter (softened)
1 tsp vanilla
1 egg
1 1/2 cups chocolate chips
2 tsp peppermint extract
green food coloring (optional)
Directions

Directions
Heat oven to 350. In bowl mix flour, baking soda, salt, hot chocolate mix and chocolate chips together, set aside. Mix light brown sugar, butter, vanilla, pepper extract and egg. Then slowly add your dry ingredient, mix well! Stir in green food coloring (optional). Use a small scooper and drop dough on baking sheet. Bake for 10 minutes, cool on wire rack.
