Pamela's No Bake Cookie Bites



If you need a fast, healthy cookie this is it.  You don't have to turn your oven on, all you need is the stove top a few ingredients and you will have a healthy treat that the entire family will love.
I made 2 batches, just because I know my kids, they wont 3 or 4 cookies and I let them, because these are healthy and not a sugary treat.  Alright you ready for this easy, peasy recipe!


Ingredients

1/4 cup fat free milk
1/4 cup light brown sugar
1/4 cup unsalted butter
1/4 cup natural peanut butter
1/2 tsp cocoa
1 1/2 cups oats
1/2 tsp vanilla


Directions

In a saucepan on medium heat, bring to a boil, milk, light brown sugar and butter.  Add peanut butter, cocoa stir for 1 minute.  Stir in oats and vanilla.  Drop bites by spoonfuls onto wax paper or baking sheet cool until firm.

Christmas in July ~ Red Velvet (Red & Green) Cupcakes




Christmas is my favorite holiday and I am so excited to be able to make a holiday treat.  Today I am going to make Whole Wheat Red Velvet Red Green Cupcakesthese cupcakes are so moist and delicious, this is a very simple recipe, if you follow it, you will have a heavenly healthy treat.


Ingredients

2 1/2 cups whole wheat flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 cup fresh buttermilk
(1 tsp vinegar & fat free milk)
2 eggs
1 1/2 cups canola oil
2 tsp vanilla
1 tsp white vinegar
1 cup light brown sugar
1/4 cup cocoa
1 tbsp red food flavoring

Directions
Set oven to 350

Mix wet ingredients thoroughly, and add sifted dry ingredients slowly.  Fill cupcake tins 1/2 full and bake for 18 minutes.  Let cool on wire rack.



Green & Red Buttercream Frosting


2 sticks unsalted butter (softened)
3 cups sifted powdered sugar
2 tsp vanilla
fat free milk (if needed)

Cream butter and vanilla, add powdered sugar slowly, add a little milk if needed.  Put frosting in two different bowls and add green food flavoring to one and red food flavoring to the other, mix completely. Fill your piping bags, cut holes at the end of each, put another piping bag on top with your 1M tip (that's what I used) and start piping your cupcakes, and ENJOY!

Guest Post ~ The Taylor House




Hi!  Thank you, Pamela, for having me share a post today!  
I am Chrissy and I blog over at The Taylor House!  I love sharing yummy recipes, crafts, home decor ideas, cleaning and organizing tips.  I would love to have you stop by and say hello!

Fruit Punch Kool Aid Slush

My little guy LOVES Slushies and I figured there was probably a pretty easy way to make them homemade.  
This is what we came up with!

Ingredients{This was for individual Slushies}:
3 Tablespoons Fruit Punch Kool Aid
3 Tablespoons Sugar
1/2 Cup Lemon Lime Soda
1 1/2 cups Ice

Directions:
Mix Everything together in a blender {I used our small Magic Bullet type blender}

Pour into a glass and Enjoy!


We used a Strawberry on top as a garnish!

Alexa & Lillian Travel The World



This week I had some wonderful house guests, they were so nice and quiet, and I didn't have to really wait on them, they were no trouble at all.  There names are Alexa and Lillian, there mother blogs over at Momalogues and they are traveling the world.  They made it to Maryland, on the East Coast, we live in a small town called Centreville, we are in the country, its quiet and so peaceful.  The kids were so glad to have them here,  they woke up one morning and Alexa and Lillian were making breakfast for everyone and they did a great job, pancakes are a hit in our house.


Later on in the day we went out into the garden and dug up the potatoes, it was so much fun, Alexa checked the cucumbers and Lillian checked to see if the carrots were ready! They are good little farmers.


After all that hard work, it was time for some play, so off to the pool, everyone had a great time, there was so much splashing and playing games.  Alexa and Lillian also played on the play set they were sliding down the slide, they had such a great time!


For a snack everyone helped make cupcakes, Fun Funfetti Cupcakes, they came out great, and every one agreed!



Some facts about Centreville~

~Our library just celebrated being in service for 100 years
~We have town police officers and sheriff department in our small town
~25 minutes from us is the famous Bay Bridge that you have to cross in order to get to the other side of Maryland
~Queen Anne's county Fair celebrates 50 years in August 2012, (my kiddies are in 4H and they enter things to the fair and receive awards and money for there entries) 
~ We are the home of the Baltimore Ravens football team *Go Ravens

Guest Post - Five Little Chefs

 I first want to thank Pamela for inviting me to Guest Post here today! We are SUPER excited about this opportunity! Five Little Chefs was started this past January. My kids or "Little Chefs" as I call them LOVE to help me in the kitchen and LOVE to watch the Food Network. We decided to share our adventure as I let my Little Chefs have full control of the kitchen! They chose the recipes and execute every part they are safely able to do while I am constantly teaching and observing. No I did not go to culinary school. I'm just a Mom who wants to teach her Little Chefs how to cook. We are fully enjoying the memories we are creating!


   My parents have an apricot tree that was ready for picking. My Little Chefs had a great time visiting and climbing the tree to pick just the perfect apricots. We have been preserving the harvest by dehydrating and making jam. We wanted to make a dessert with the fresh fruit and Little Chef A thought Apricot Crisp would be a great recipe. This would be her first time making a crisp. After cutting apricots for the past two days Little Chef A was VERY proficient in this task. I love it when I teach her something and then see the results! I was able to tell her what needed to be done and she responded with, "I can do it mom. I don't need any help." She added in the almond extract, cinnamon and flour then gently stirred.


   Little Chef A poured the apricots into a baking dish and sprinkled some white sugar on the top.


  To make the crisp I thought it would be easier to cut in the butter if I had her use the food processor. She measured out the brown sugar and flour and pulsed a few times. Then she cut the butter into smaller chunks and added and pulsed again. She quickly found out when you turn it on and not pulse it turns into a ball. That is NOT what we were looking for, but that is how our kitchen is! She added the quick oats and was careful to pulse this time and finally got the consistency correct. Yea!


   Little Chef A along with Little Chef D used their clean fingers to break the mixture apart into even smaller pieces and very meticulously placed each piece on top of the apricots. Every apricot HAD to be covered just the right way before I was told it was done and ready to go in the oven!


  At this point Little Chef A was wondering how the crust was going to form. I was a little perplexed. After baking and cooling she finally explained she was expecting something else. The way she described it I think she wanted an apricot cobbler because she was talking about a cake crust on the top.  Not to worry though she absolutely LOVED this dessert as well as her sisters. I think next time we will add some vanilla ice cream on the side and they will think I'm the best mom ever with TWO desserts in one bowl!



Fresh Apricot Crisp
Adapted from allrecipes.com

Ingredients
4 cups apricot halves
1/2 teaspoon almond extract
1 teaspoon cinnamon
1 Tablespoon flour
1/4 cup white sugar
3/4 cup brown sugar
1/2 cup flour
1/2 cup butter
3/4 cup quick oats

Directions
1. Preheat oven to 350 degrees F.
2. Cut apricots in halves or smaller. (We prefer 6ths) Mix carefully cut apricots, almond extract, cinnamon and flour. Place apricots in a greased baking dish. Sprinkle white sugar over the top.
3. In a bowl or food processor combine the brown sugar and flour. Cut in the butter. Lightly stir in the quick oats. Spoon the mixture over the apricots.
4. Bake in the preheated oven until the fruit is soft and the topping is browned and crisp 35 to 40 minutes.

Funfetti Fun Cupcakes


Now who doesn't like sprinkles on top of a cupcake?  My kids asked me to make a cupcake with sprinkles inside the cupcake, so you know I had to try it.  Once I looked at the cupcake the name FUNFETTI came to mind, so today we have FUNFETTI FUN CUPCAKES.


Ingredients

2 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt

1 cup fresh buttermilk
2 eggs
1 1/2 cups canola oil or applesauce
1 cup light brown sugar
2 tsp vanilla
handful of rainbow sprinkles

Mix wet ingredients, then add sifted dry ingredients slowly.  Stir the sprinkles in.   Fill cupcake liners 1/2 full, bake for 18 minutes, let cool on wire rack.

Creamy Buttercream Frosting

2 stick unsalted butter (softened)
3 cups powdered sugar
2 tsp vanilla
fat free milk (if necessary)
handful rainbow sprinkles

Cream butter and vanilla, add powdered sugar slowly, add a little milk if needed for consistency.  Mix on high for 2 minutes.  Pipe cupcakes I used a 4B tip.  Add rainbow sprinkles to the top.
