Chocolatte Birthday Cupcakes

I have been super busy this week, with J's birthday party and then getting ready for my 1st Holiday Craft Fair on Friday, I am so excited to show my treats to everyone, and then for people to buy them!  Today I will share the cupcakes that I made for J's 9th birthday!  


His party them was "Pizza Party the colors were red and yellow, he wanted chocolatte cupcakes with red and yellow frosting, and I also made Hot Chocolate, Chocolate Chip Cookies that went like hotcakes, everyone is loving those yummy treats!  This was a chocolaty tasting cupcake.  All the kids loved them, I love looking at kids reactions to my treats, to see if they like it or not, and majority of the time they love them.  Its funny because they don't even know they are eating a treat that is made with whole wheat flour and other healthy ingredients!






Cupcake
2 1/2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1/4 cocoa
1 cup light brown sugar
2 eggs
1 cup buttermilk
1 1/2 cups canola oil
1 tsp vanilla
Frosting
1 cup unsalted butter (softened)
4 cups powdered sugar
Christmas red icing coloring
yellow icing coloring
1 tsp vanilla
fat free milk (if needed)

In a bowl sift dry ingredients and set aside.  Mix light brown sugar, eggs, buttermilk, canola oil and vanilla until mixes well.  Slowly add dry ingredients and mix well.  Fill cupcake tins 1/2 full and back for 18 minutes on 350.  Cool on wire rack.

While your cupcakes cool, start making your frosting, mix butter and vanilla together and then slowly add powdered sugar and if you need to add a little milk you may to get the consistency that you need to pipe your cupcakes!  I used red and yellow icing coloring and added it to my frosting.

Hot Chocolate, Chocolate Chip Cookie Bars



What a name for these bars.  I think I really outdid myself when I made these.  I didn't want to make chocolate chip cookies again, I made those last week.  So I thought hey why not make it into bars, but add a little something new. Hot chocolate is the secret ingredient.  They came out better than I expected, they were downright delicious, I had one with some milk I was in heaven.  

Hot Chocolate, Chocolate Chip Cookie Bars


You already know that the kids were loving these, anything with chocolate in it, is a thumbs up from my taste testers.  


Cookie Bar
2 cups whole wheat flour
1 tsp baking soda
2 packets of instant hot chocolate mix
1/2 tsp salt
1 cup light brown sugar
1 cup unsalted butter (softened)
1 tsp vanilla
1 egg
1 1/2 cups chocolate chips


Directions
Heat oven to 375.  In bowl mix flour, baking soda, salt, hot chocolate mix and chocolate chips together, set aside.  Mix light brown sugar, butter, vanilla and egg.  Then slowly add your dry ingredient, mix well!  Grease a baking sheet and spread the cookie mixture out.  Bake for 10 minutes, cool on wire rack. cut into squares!

Skinny Coconut Macaroons

It's beginning to look alot like  Christmas in my house, we put up our decorations this weekend! Not everything is up yet, because we are getting the house painted inside, so I have to wait to put my wall decorations up.  I so love this time of year, I don't like the cold but I love the holidays, especially Christmas, not for the gifts, but for the true meaning!  Jesus is the reason for the season!
 
I love making Christmas treats, I love eating Coconut Macaroons  that's what I call them, not sure if that is the correct name.  I made them nice and healthy, and they were delicious.  So I thought why not make some green and red ones for the holiday! They came out really good!

 

Skinny Coconut Macaroons 
Ingredients
3 cups unsweetened coconut flakes
1/4 cup warm water
1/4 cup coconut oil
1/3 light brown sugar
3 eggs, beaten

Directions
Set oven to 400, in bowl combine coconut with warm water, and coconut oil.  Stir well.  In another bowl combine eggs and light brown sugar, mix thoroughly.  Pour egg mixture into coconut mixture and stir well.  Use small scooper, drop cookie on an ungreased baking sheet. Bake for 12 minutes. Cool on wire rack.
Want to color them. I used coloring for icing, I like those better!  You can use food coloring also!

My favorite is the Chocolate Turkeys I make!  I always make an army of them every year and everyone goes nuts for them.

I know this is cliche, but my favorite Thanksgiving dessert is Pumpkin Pie! I could eat a whole pie by myself, lol. I will normally make about 6 pumpkin pies for Thanksgiving - I usually give 2 away, have 2 for our family at Thanksgiving dinner, and 2 saved for leftovers after Thanksgiving.  I personally like using a graham cracker crust for my pumpkin pies, I think it gives it that certain something.

I'm so happy to be back here at Pamela's Heavenly Treats & to be co-hosting Heavenly Treats Sunday!  Since my friend Pamela is all about the healthy desserts, I decided to share one of my favorite cookies for the calorie counters!  Each of these chocolate beauties only has 105 calories & 4 grams of fat so feel free to enjoy dessert!!
  


Ingredients
1 package Devil Food Cake Mix
2 eggs
2 tablespoons butter, softened
2 tablespoons water
1/2 cup mini semi-sweet chocolate chips

Instructions
1. Preheat oven to 350 degrees. Coat a baking sheet with cooking spray.
2. In a large bowl, combine the cake mix, eggs, butter and water - it will be VERY thick
3. Fold in the chocolate chips.
4. Drop by tablespoons onto the baking sheet about 2 inches apart.
5. Bake for about 10 minutes or until the cookies are set.
6. Cool for just a minute or two on the baking sheet and then remove to a wire rack to cool completely.

Make You Wanna Holla - No Crust Sweet Potato Pie


We had a blessed Thanksgiving! This year it was just us, so I didn't have to entertain, I cooked, baked and took a little nap!  We watched the Shrek marathon and football!  I hope you all had a blessed Thanksgiving! 


I have NEVER made a pie before, any type, I make cobbler, but not pie.  My grandmother made every kind of pie, cake, cobbler you name it.  So this year I wanted to make a sweet potato pie, but I wanted it to be a healthy pie.  
So I thought how about a 
Make You Wanna Holla ~No Crust Sweet Potato Pie and so glad I made it, because it was YUMMY!


Pie
5 medium sweet potatoes cooked and mashed
1 cup light brown sugar
1/2 cup whole wheat flour
1/2 cup unsalted butter (softened)
1 egg
1 tsp vanilla
1 tsp cinnamon
1/8 tsp nutmeg
1 tsp allspice
small marshmallows
whipped cream




Directions
Mix all ingredients together except the whipped cream.  Put mixture in a round pie dish or a rectangular pan.  Bake on 400 for 25 minutes.  Cool on a wire rack.  Put a dollup of whipped cream on top, sprinkle a little cinnamon and dig in!
