2012 Year in Review Link Up - CoHost

This was the month that I started blogging January 2011, I really didn't know anything about it, I just jumped in head first and I am glad I did, I have met some wonderful friends, this is the month that I started making healthy desserts and my very first Hospice Donation!

My heart is filled with LOVE every day, but this month I wrote 10 things that I am thankful for!  This is also my wedding anniversary month, and I have been married for 15 years to the most wonderful man in the world, we met in 1995, started dating, got engaged a year later, and married 6 months after that!  He is my night in shining armor, God sure enough gave me a gem, someone I will grow old with, and even though we married at the age of 21, and now being 37, he is still so sexy in my eyes, love it!  Through that union we have 6 kids, that are the loves of my life 5 boys ages 15, twins 13, 9 and 6, 1 baby girl 2 /2!

I started my first Desserts Link Party, it was so successful, had almost 30 dessert link ups, and now I have 100 people linking up each weekend!  Love to see everyone's wonderful dessert recipes!

Heavenly Treats Sunday Link Party #1


I made this delicious treat this month!  My kiddies said this was the best cupcake that I made so far, they are my wonderful taste testers! I made these whole wheat dutch chocolate cupcakes, and I must say yes, they are yummy!

I loved the Christmas in July posts that everyone was writing on there blogs, so I thought hey let me make a healthy Christmas in July treat! Since Christmas is my favorite holiday, I thought hey why not my famous Red Velvet Cupcakes, another awesome dessert!

I love mug cakes, and I made my first one this month, and alot of my readers, and bloggy friends loved it also, I even had some make it also and let me know how delicious it was.  If you have never made a mug cake, please make this one, it is YUMMY, and a dessert for ONE!

40 Second Chocolate Cake


I did my very first VLOG, it was so much fun, had many takes, my wonderful kiddies were all so helpful! I also made a new cupcake, Egg Free and Dairy Free!

My first time making Banana Bread, it was simple and using my whole wheat and healthy ingredients it was delicious!

My 9 year old had a party (Pizza Party Theme)  the desserts were awesome, especially the cupcake toppers, thank you bags and so on!

Now everyone knows that Christmas is my favorite holiday, because we are celebrating The Lord, and all the gifts that he gives us!  Also for the Christmas desserts, cupcakes, cookies etc!  I made some yummy mini donuts with vanilla glaze, and Christmas sprinkles they were a great hit at our Homeschool Coop Christmas Party!

Gingerbread Cut-Out Cookies

Here is one of my confessions!  Are you ready for this?  I have never successfully made gingerbread cookie dough, I make is according to the recipe, and put it in the fridge, take it out and then roll it out and it just doesn't work out!  But this year I said I am going to maybe put my own spin on gingerbread cookie dough!  I believe the Lord heard my cry, and the dough came out great and J and Z were able to do cookie cutouts and when they came out of the oven they were yummy, which has never happened! 

1/2 cup butter, softened
1/2 cup light brown sugar
1/2 cup molasses
2 tsp vinegar
1 egg
3 cups whole wheat flour
1/2 tsp baking soda
1/2 tsp ginger
1/2 tsp cinnamon
1/4 tsp salt
In a saucepan combine butter, sugar, molasses and vinegar  bring to a boil.  Remove from heat and let cool.  Stir in egg.  Combine flour, baking soda, ginger, cinnamon and salt, stir those ingredients into the molasses mixture to make a soft dough.  Divide dough 3 times, put plastic wrap over them and put in fridge for 2 hours. On a lightly floured surface, roll dough and use your cookie cutters, place on baking sheet and bake for 8 minutes on 350.  Place on wire rack once done.  (You may decorate but I was just happy that they came out nice this year)!

Deep Chocolate Nutella Cupcakes

Did I tell you how much I love NUTELLA, it tastes so good, like chocolate goodness!  I made some delicious cupcakes that are not too sweet and you can eat them in the morning with your  coffee, that's how light and fluffy these are, and I made them with whole wheat flour!

My taste testers were on the job, 5 out of 5 gave thumbs up, YAY, this is a winner so it goes in the Pamela's Heavenly Treats recipe book!  I wont take too long to give you the recipe, so here we go.

1 1/2 cups whole wheat flour
1/2 tsp salt
1 cup light brown sugar
1/4 cup cocoa
1 tsp baking soda
5 tbsp canola oil
1 tbsp vinegar
1 cup cold water
3 tbsp nutella
In a large bowl sift flour, salt,cocoa and baking soda together and set aside. Mix light brown sugar, canola oil, vinegar, cold water and nutella.  Slowly stir in dry ingredients.  Fill cupcake tins 1/2 full bake for 18 minutes on 350.  Take out oven let cool on wire rack, sprinkle with some powdered sugar!

Coconut Macaroon Cookies

These cookies are a hit at my house!  J who is 13 loves these, every Christmas he will say mama did you get the coconut for the cookies?  For him it wont be Christmas (desserts) without Coconut Macaroon Cookies.  Its such an easy recipe, but these little snowball cookies have a great addicting taste to them, you cant eat just one, or two, or three.... 

1/3 cup butter or margarine , softened

3 oz cream cheese , softened

3/4 cup light brown sugar

 egg yolk

1 teaspoon vanilla

2 teaspoons fresh orange juice

1 1/4 cups whole wheat flour

2 teaspoons baking powder

1/4 teaspoon salt

5 cups sweetened coconut flakes

Beat butter, cream cheese and sugar in large bowl until well blended. Add egg yolk, vanilla and fresh orange juice mix well. Stir together flour, baking powder and salt; slowly add to butter mixture, beating until well blended. Stir in 3 cups coconut.
Cover; refrigerate for about 1 hour. Heat oven to 350, shape dough into 1-inch balls; roll cookie balls in remaining 2 cups of coconut. Place on ungreased cookie sheet. Bake 10 minutes or until lightly browned. Cool 1 minute; carefully remove from cookie sheet to wire rack. Cool completely.

Nutella Chocolate Chip Cookies

When I read a recipe and see that nutella is added in a recipe, I know its going to be a yummy treat!  I picked up some more nutella when I went to BJ's and going up and down the aisles I was thinking of new and yummy tasting treats that I could make.  So I made a cookie, but not just any cookie, a nutella Chocolate Chip Cookie, and I tell you with the nutella mixed into the cookie dough, it has a distinct yummy taste!  If you have never tried nutella, please go and pick some up, you wont be sorry!
So today we have Nutella Chocolate Chip Cookies, when you bite into this cookie, you taste yummy, delicious, superb, stupendous flavored cookies.  Very easy to prepare, you really cant mess up this recipe!

1 cup light brown sugar
1 cup butter, (softened)
1 tsp vanilla
1 egg
2 cups whole wheat flour
1 tsp baking powder
1/2 tsp salt
2 cups chocolate chips
1/4 cup nutella
Heat oven to 350.  In bowl mix flour, baking powder, slat and chocolate chips and set aside.  Mix light brown sugar, butter, vanilla and nutella until well mixed, then add flour mixture slowly.  Use small scoop to drop dough on baking sheet, bake for 9 minutes, remove cookies and cool on wire rack.

No Cook Peanut Butter Fudge

I have NEVER made fudge before, I have always wanted to make it, but a lot of the recipes that I found were just to complicated for me, I need a easy recipe, not too many ingredients!  I was surprised when I looked for an easy fudge recipe, I really found one that looked good.  I did change a couple of ingredients, so had in the back of my mind that it probably wont come out right.  Well I was wrong, it came out so delicious.  I was so proud of myself.  My taste testers were excited to taste these little squares of yummy goodness and I got a thumbs up for this easy, no cook fudge recipe!
3/4 cup creamy peanut butter
1/4 cup butter (softened)
1/2 cup agave nectar
1 tsp vanilla
4 cups sifted powdered sugar
Cream peanut butter and butter, add agave nectar and vanilla and mix thoroughly.  add powdered sugar with a spoon until it becomes to thick to stir.  Press into a foil lined, greased 8x8 pan. Chill for 1 hour or more to firm up so you can cut into pieces!

Chocolate Surprise Cookies / Chocolate Surprise Thumbprints

It's beginning to look a lot like Christmas, everyone has there Christmas trees up, lights, decorations!   I love to bake Christmas cookies, desserts with my kiddies.  Every year I like to make at lease two new cookie recipes!  
This year I came across this recipe and it looked yummy and easy to make, so I tried it. So glad I did because these are some great tasting cookies, and the kiddies gave them a thumbs up, they are my awesome taste testers, they never steer me wrong!

Chocolate Surprise Thumbprints / Chocolate Surprise Cookies

2 cups whole wheat flour
1 tsp baking powder
1/4 tsp salt
1 cup chocolate chips
1/2 cup of butter
1 package of cream cheese (softened)
1 cup light brown sugar
1 egg
1 tsp vanilla
1/3 cup any type jam (I used grape)
1 4 cup white sugar (for rolling cookie in)
Oven 350, mix flour, baking soda and salt set aside.  Microwave chocolate and butter on high about 2 minutes stir until chocolate is melted.  Whisk in cream cheese, add light brown sugar, egg and vanilla mix well.  Roll dough and coat with sugar, place on baking sheet, press your thumb into center of each dough ball, fill each indentation with small amount of jam.  Bake for 9 minutes, wait 1 minute, and then transfer to wire rack.

~ I also made some of these cookies, just regular Chocolate Surprise Cookies, with out the jam in the middle, they were also very delicious~
