I have been having a great time celebrating my 1 Year Blog Anniversary this month, love to all my friends who are apart of my celebration by guest posting and/or donating prizes for giveaways! I have found so many new dessert recipes, that I can tweak a little to make healthy!
Since its Winter and almost Valentines's Day, I thought hey why not make my easy snowball cookie, into a Pink Snowball Puff. When you bite into these little puffs all you taste is pure YUMMINESS! Then my taste testers gave it 2 thumbs up I knew these would be a hit. I will be making these for our Valentine Party at our homeschool coop and for my baking class!
Cookie
1 cup of unsalted butter (softened)
1 cup light brown sugar
1 tsp vanilla
1/2 tbsp coconut oil
2 1/4 cups white whole wheat flour
pink coloring
powdered sugar (to coat)
Directions
Cream butter, light brown sugar, vanilla and coconut oil. Mix well, add flour slowly, then add pink food coloring
(I used icing coloring that's all I use) and mix well. Roll dough into small balls and bake on 350 for about 15 minutes, let cool on wire rack and toss in powdered sugar!

ReplyDeleteJust wondering how hard it is to find coconut oil and/or can any other oil be used as a substitute? (Vegetable, Canola, etc....) ALSO... GREAT, GREAT, GREAT EASTER IDEA ... USE VARIOUS COLORS AND MAYBE EVEN ENLONGATE THE BALLS SO THEY COME OUT KIND OF EGG SHAPED!!! Just came to my mind as I was typing about the oil...
