------------------------------------------------------------ Hello all! My name is Coretta and I am stopping by from my blog This Little Mommy Stays Home! I am an enthusiastic stay at home Mom to two beautiful young girls who keep me on my toes at all times! I started blogging last year about my wonderful family, my quest to become a labor Doula and the process of starting a small business.
My girls and I enjoy cooking and baking together so we are always trying different recipes and putting our own stamp on them. I found this recipe to be very easy which is great because the girls can be more involved. I also love using bananas to replace sugar when possible! Hope you enjoy and as always have fun when you bake!
Sweetheart Cupcakes
Cupcake Ingredients:
1/2 cup softened butter
2 Ripe bananas
2 eggs
2 tsp. vanilla extract
1-1/2 cups all-purpose flour
1/2 tsp. baking powder
1/4 tsp. salt
2/3 cup cold milk
Red food coloring
Frosting: 4 cups Confectioners Sugar
4 tablespoons softened butter
2 tablespoons vanilla
Red Food Coloring
Directions: Preheat oven to 350 degrees. We used a metal nonstick heart shaped muffin pan. Since we could not use cupcake liners I greased each heart with butter and dusted with flour. Cream butter and bananas. Add eggs one at a time until batter is creamy, then stir in vanilla. In a separate bowl combine dry ingredients then slowly add to wet mixture and stir in milk. We added 4 drops of red food coloring to turn the batter pink. Now wasn't that easy?

ReplyDeleteHi Pamela! These cuppy cakes look wonderful! Just one question....how long do they bake? I mean, I could GUESS....but don't want to mess up! another question, re: your pink snowballs. The recipe calls for coconut oil. Half a teaspoon. I don't have any, I would think it's probably pricey.....can I leave it out? Is there something I can replace it with? Thanks for your help....I'm making these for Valentine's day! Dona
