Oatmeal Yogurt Mini Cakes

We love anything made with oatmeal in our house, so whatever I make as long as its healthy and yummy is a plus on my kiddies list!  I was going to make cupcakes, but I thought I would make mini cakes.  I looked at my recipe and started to add some new things to it, I added Chobani yogurt YUM, and just with adding that new ingredient it took the entire treat to a whole new yumminess (I think I made that word up).  They were so moist and just plain delicious!  My kiddies gave it 2 thumbs up!

Mini Cakes
2 1/2 cups whole wheat flour
1 tsp baking powder
1/8 tsp baking soda
2 tsp cinnamon
2 tsp nutmeg
4 eggs
1 1/2 light brown sugar
1 cup unsalted butter (softened)
2 tsp vanilla
1 cup yogurt or sour cream (I used Chobani)
4 cups oats
1/2 cup chocolate chips or raisins
Directions
Mix the first 5 ingredients and set bowl aside, cream eggs, sugar, butter, vanilla and yogurt, add flour mixture slowly and then add oats and chocolate chips/raisins, mix thoroughly.  Fill cupcake tins, or square pan 1/2 full and bake on 350 for 18 minutes.  Let cool on wire rack.

  7. These look tasty. I have that pan so I may give these a try. I will omit the chocolate chips though and maybe add cinnamon or caramel chips. It is strange that I do like chocolate, but not the chips. I like chucks though. I know I am strange.....
